A few things you should know:
- Every order is processed from fresh pork belly. We source from local farmers whenever possible, and buy from local meat shops when it isn't. All of our ingredients are purchased from local small businesses when available - we firmly believe in supporting our community, and the people who live and work here.
- All curing is done twice a week. Orders will be started within 72 hours of receipt. We are a very small operation, and we hold ourselves to the highest standards of quality - and to maintain those standards, we devote an entire day to preparing each batch of bacon we cure. HOWEVER! If you have a rush request, or need something right away, please send me an email. I will do my best to make the magic happen on a tight schedule. (And yes, there are a few things I always keep on hand in case of a bacon emergency. )
- Our bacon is shipped as a slab. I prefer to slice the bacon when I cook it, and in my experience it ships and stores better as one intact piece. We do not have the equipment to slice and package innumerable pounds of bacon. Yet.
- I LOVE WHAT I DO. If you are happy, I am happy. If you are in the least unsatisfied, let me know, and I will do my best to change that.
